About Video - WHAT I EAT IN A DAY: VEGAN, HEALTHY & TASTY ??????

RECIPES:
BREAKFAST
Ingredients:
- As many rolled oats as you like
- 1 x banana
- Almond milk (use as much or as little as you like to reach desired consistency)
- 1 tbspn of cacao powder
- 1 tbsp chia seeds
- 1 tbsp almond butter
How to make:
- Add your oats to a pan with the almond milk on a medium heat until it starts to bubble and goes creamy.
- Add the cacao to the porridge.
- Pour into a bowl.
- Slice the banana and add to the top of the porridge.
- Sprinkle chia seeds over porridge.
- Add almond butter and enjoy.
LUNCH
Ingredients:
- 1.5 cups of chickpeas
- 1.5 tspn sumac
- 0.25 tspn of ground cumin
- Juice from half a lemon
- Half a cucumber chopped
- 2 cups cherry tomatoes chopped
- 1 red onion chopped
- Handful of coriander chopped
How to make:
- Cook the chickpeas as per the cooking instruction on the packet.
- Add the sumac and cumin and stir in well.
- Add all other ingredients and mix in well.
- Enjoy!
DINNER
Ingredients:
- 1.5 tspn ground cumin
- 1 red onion chopped
- 1.5 tspn garlic powder
- Half a cup of Jalapeños
- 2 tbspn chilli powder
- 2 cups of shiitake mushrooms
- Half a courgette chopped
- 1.5 cup black beans
- 1.5 cup kidney beans
- 2 cups crushed tomatoes
- A handful of chopped coriander
- 1 cup of kale chopped
- Optional: As much tomato puree as you need to thicken
- I use veg stock to fry saute, you can use olive oil
How to make:
- Saute onions in veg stock.
- Add cumin and chilli powder for a minute.
- Add crushed tomatoes
- Add all other ingredients
- Add vegetable stock and tomato puree to reach the desired consistency.
- Enjoy!
