We are sure that you will make the most delicious carrot cake! ✅ Ingredients • carrot – 17 oz / 500 g • all-purpose flour – 12 oz / 350 g • vegetable oil – 1 cup / 250 ml • sugar – 9 oz / 250 g • 4 eggs • ground walnut – 5 oz / 150 g • raisin – 5 oz / 150 g • baking powder – 2 tsp • ground cinnamon – 2 tsp • ground ginger – ½ tsp • vanilla powder – to taste • salt – ¼ tsp Frosting • cream cheese – 1,3 lb / 600 g • sour cream (25%) – 12 oz / 350 g • sugar – 7 oz / 200 g • vanilla sugar – to taste ✔︎ You will need - mixer - oven - carving board - grater - cake pan (10-inch) - parchment paper - 2 bowls 📙 Preparation 1. Preheat the oven to 340˚F / 170˚C. 2. Place the raisin in a bowl of warm water for 10-15 minutes, then rinse and drain. 3. Roast the walnuts in a pan, stirring continuously, over medium heat for 10 minutes. Then let them cool a little and chop up. 4. Grate the carrots, mix them with the raisin and walnuts. 5. Sieve the flour into a separate bowl, add baking powder, ground cinnamon and ginger, salt and vanilla powder. Mix it all well with a fork or a whisk. 6. Beat the eggs with sugar and oil with a mixer. Add the prepared flour mixture and mix again. Add the grated carrots with nuts and raisin, mix well. 7. Line the cake pan with parchment paper and grease it with oil. Pour the cake batter into the pan and smooth the top. 8. Bake for 50-60 minutes in the preheated oven. 9. Remove the cake from the pan and let it cool completely on a wire rack. 10. Beat the sour cream and sugar together until smooth with a mixer, add the cream cheese and vanilla sugar, mix until smooth. 11. Level off the top of the cake with a knife, crumble the remains to use them later while decorating the cake. 12. Cut the cake into 2 or 3 even layers. Assemble the cake: place one cake layer on a serving platter and spread with the icing, repeat. Spread the rest of the icing over the top and sides, sprinkle with the cake crumbs. 13. Slide the cake into the fridge for 2 hours. 14. Serve carrot cake as a dessert with tea or coffee. Store in fridge.
