Vegan Burrito bowl - What I Ate Today
BREAKFAST
Ingredients
1 cup mixed frozen blueberries & strawberries
1 cup mixed frozen mango and pineapple
1 small beetroot
2 tbsp chia seeds
1.5 cup spinach
As much almond milk as you need
How To Make
Put everything in you smoothie maker and blend into a nice smooth creamy texture
Serve and enjoy!
LUNCH
Ingredients
2 cups lettuce
230g black beans
350g white rice
2 cups cherry tomatoes
2 cups beansprouts
1 red onion
1 chilly
1 avocado
1 lime
2 tbsp crushed chillies
2 tbsp ground coriander
2 tbsp ground garlic
2 tbsp ground cumin
1 red pepper
1 orange pepper
2 tbsp cayenne pepper
1 tbsp dried oregano
How To Make
Chop the lettuce into strips
Chop the chilly
Chop the peppers
Dice the onions (save a small handful for the guacamole)
Scoop out the avocado
Chop the cherry tomatoes in half
Add vegetable stock to the pan
Boil the white rice on low heat according to packet
Saute onions
Add beansprouts
Add blackbeans
Add peppers
Add chillies
Add the garlic, cumin, oregano, crushed chillies, and coriander and stir in well.
To make the Guacamole: add the avocado, a small amount of the cayenne pepper and cumin, remaining onions, a few of the leftover cherry tomatoes, and a squeeze of lime.
Add the rice to a large bowl
Add the bean mix
Add in tomatoes
Add the lettuce
Add your Guacamole to garnish
Serve and enjoy!
DINNER
Ingredients
3 Tbsp white wine vinegar
350g arborio rice
300g mushrooms
300g frozen peas
150g sundried tomatoes
100g jalapfenops
2 tbsp dried oregano
1 vegetable stock cube
2 red onions
4 cloves garlic
1 large handful spinach
Half cup tahini
How To Make
Chop all the ingredients that need to be chopped.
Make your vegetable stock.
Salute the garlic
Then onions
Add your arborio rice with the vegetable stock and simmer for 15 minute (add more vegetable stock as required)
Add the white wine vinegar
Add the frozen peas
Add in the mushrooms
Add in the sundried tomatoes
Add the oregano
Add in the tahini and stir in well
Add in the jalapeños
Add in the spinach and wilt down
Let simmer for a further 4 minutes
Serve and enjoy!
