Recipe by Always Yummy Sometimes, when there is little time left before your holiday or friends’ dinner, you are reminding about a dessert. To bake a red roll, you will need literally an hour and an amazing result will go beyond all expectations. Ingredients: • all-purpose flour – 3 oz / 100 g • sugar – 3 oz / 100 g • cocoa powder – 1 tbsp • 3 eggs • baking powder – ⅓ oz / 10 g • vanillin – ¼ tsp • culinary red coloring – 2 tsp • cream cheese – 10,5 oz / 300 g • butter – 6 oz / 180 g • powdered sugar – 3 oz / 90 g • powdered sugar – 3 oz / 100 g • cold water – 4 tsp • cognac – 3 tbsp • fresh or frozen red currant – 2/3 oz / 20 g You will need: • baking dish 12*16 in / 30*40 cm • deep bowl • hand mixer • parchment paper • food film Preparation: 1. Make the batter: beat the eggs and sugar with a hand mixer until froth. 2. Add the flour, cocoa powder, vanillin and baking powder, beat with the mixer until smooth. 3. Add the coloring and combine gently with a spatula until regular color. 4. Make the cream: in a deep bowl combine the cream cheese, softened butter and 90 g of powdered sugar with the mixer. 5. Line the baking dish with a parchment paper with its edges above batter level, pour in the batter and spread it evenly within the dish. 6. Bake it in the oven preheated to 350°F / 180°C for 10 minutes. 7. Take out and lay out the cake with the paper on a working surface. 8. Drizzle it with the cognac. 9. Coat the cake with the prepared cream and roll up tightly. 10. Wrap the roll into a paper or food film and place into the fridge for 30 minutes. 11. Make the sugar frosting: in a bowl combine well 3 oz / 100 g of powdered sugar and 4-5 tsp of cold water until thick and smooth. 12. Pour the frosting on the chilled roll and decorate with the red currant. 13. Place the red roll into the fridge for 30 minutes. Serve to your festive table.
